Celery is from the same family with parsley and fennel, the umbelliferae family. It can grow to the height of up to 16 inches. The white celery is grown shaded from direct sunlight, thus has less chlorophyll, compared to its greener counterparts.

While most people associate celery with its prized stalks, the leaves, roots and seeds can also be used as a food and seasoning as well as a natural medicinal remedy.
The ribs of celery are crunchy and are often used to make soup or salad. It has a salty taste, so celery juice is a good mix with the sweeter fruit juices. Depending on variety, some may taste very salty.

Eating celery will reduce high blood pressure and give the effect of calmness.
Celery clears uric acid from painful joints and may help the treatment of arthritis and rheumatic problems.

As above, celery is not only low in calories, (almost non-existent) but we actually burn calories eating it.
Celery juice is extremely helpful in weight loss, as it is a natural appetite suppressant. ‘Snacking’ on celery all day will lessen the urge to eat, and as stated before, will burn extra calories, without adding any. Celery is rich in vitamin K, which will help to suppress the appetite.
While many foods lose nutrients during cooking, most of the compounds in celery hold up well during cooking.
