Vegetables with Baked Beans Salad Recipe

Ingredients:
Beans: 1 tin baked, drained and washed
Onion: 3 tbsp, chopped
Tomato: 1 tbsp, chopped
Cucumber: 1 tbsp, grated
Carrot: 1 tbsp, grated
Garlic paste: 1/2 tsp
Lemon juice: 1 tsp
Olive oil: 1 tbsp
Tomato ketchup: 1 tbsp
Low fat hung curd: 1 tbsp
Green capsicum: 1 tbsp, grated
Yellow and red capsicum: 1 tbsp, grated
Lettuce: 1 tbsp, chopped
Grated coconut: 2 tbsp
Coriander leaves: 2 tsp, chopped
Salt: a pinch
Method:
1. Pat dry the washed baked beans little.
2. In a microwave bowl add the baked beans,garlic paste,tomato ketchup,capsicums,carrot,coriander leaves and tomatoes.
3. Sprinkle olive oil and mix well.Microwave on high for 2 minutes.
4. Now add onions, cucumber, coconut,curd,lettuce, salt and mix well.
5. Sprinkle lemon juice and serve.
