Seafood Soup Recipe
Cooking Time: 25 minutes
Servings: 6
Ingredients:
Olive oil: 1 tbsp
Shallots: 2, chopped
Garlic clove: 1, crushed
Fish or chicken: 900ml stock
Saffron: a pinch
Bay leaf: 1
Mixed vegetables: 225g
Tomatoes: 3, deseeded and diced
Fish(cod/salmon): 200g
Seafood cocktail (mussels, squid rings and prawns): 340g
Method:
1. Heat the oil in a large pan and fry the shallots and garlic gently for 5–6 minutes.
2. Add the stock, saffron and bay leaf and boil. Reduce the heat, cover and simmer gently for about 10 minutes until tender.
3. Increase the heat to high and add the frozen mixed vegetables
4. Bring back to the boil, then stir in the tomatoes, cod and seafood cocktail.
5. Reduce heat and simmer gently, without stirring, for about 3 minutes until the cod is white and firm
6. Serve hot.
