Grilled Prawn Skewers Recipe

Ingredients:
Wooden skewers
Olive oil: 3 tbsp
Dry breadcrumbs: 75g
Parsley: 2 tsp, chopped
Garlic: 1 clove, chopped
Fresh herbs (dill, tarragon or chives): 2 tbsp
Salt: to taste
Black pepper: to taste, freshly ground
Green Australian prawns: 650g, peeled and deveined with tails
Lemon wedges: to serve
Method:
1. Soak the skewers in water.
2. Combine oil and breadcrumbs into a large bowl and whisk until emulsified.
3. Add the parsley and garlic or herbs and season with salt and pepper.
4. Toss the prawns in the breadcrumb mixture, ensuring they are all well coated. Let them sit in the mixture for 20 minutes.
5. Heat the barbecue or grill while you are skewering the prawns.
6. Curl them up with the tail end in the centre and thread them on to skewers in a horseshoe-shape so they don’t swivel when you turn them on the barbecue.
7. Cook for 2-3 minutes each side.
8. Serve with lemon wedges.
