Chicken Herb Soup Recipe
Cooking Time: 75 minutes
Servings: 3
Ingredients:
Boneless chicken: 100g, shredded pieces
Chicken stock: 1 L
Coriander leaves: 1 tbsp, chopped
Mint leaves: 6, chopped
Spinach: 1 cup, chopped
spring onion: 2, chopped with the greens
Nutmeg powder: 1/2 tsp
White flour: 1 tsp
Olive oil: 1 tbsp
salt: to taste
White pepper: to taste
Method:
1. Combine the chicken stock with the chopped herbs in a pan and boil.
2. Now simmer the heat for about 10 minutes or till the herbs are tender.
3. Cool and blend to a puree.
4. Heat half the oil in another pan and stir-fry the shredded chicken pieces till tender. Then remove from the pan and keep aside.
5. In the same pan heat the remaining oil, add the white flour and stir-fry for about a minute.
6. Add the chicken pieces, herb puree, white pepper powder and salt.
7. Simmer on medium level while stirring for about 4 minutes.
8. Serve hot.
