Cauliflower and Egg Salad Recipe

Preparation Time: 15 minutes
Cooking Time: 2-3 minutes
Servings: 2

Cauliflower florets: 1 cup
Egg: 1, hard boiled
Carrots: 1, sliced
Green peas: 1/4 cup

For salad dressing:

Low fat hung curd: 1/4 cup
Lime juice: 1 tsp
Honey: 1 tsp
Garlic:1 clove, chopped
Low fat milk – 1 tbsp
Mint leaves: Few
Pepper powder: to taste
Salt : to taste

Mix all the ingredients in a bowl and mix until creamy.

1. In a vessel pour some water and add salt, cauliflower florets, carrot, green peas and stir.
2. Cook for 2 minutes on medium heat.
3. Remove from fire and drain the vegetables.
4. Cut boiled egg halved.
5. Place egg and veggies in a bowl and pour the dressing on top of it. Mix well.
6.Garnish with mint leaves and serve.
