Ingredients:
Spinach: 2 large bunches
Olive oil: 2 tbsp
Raisins: 1/4 Cup
Pine Nuts: 1/4 Cup
Apples: 1/4 Cup, peeled and cubed
Shallots: 4 tbsp, chopped
Salt: to taste
Method:
1. Wash and dry spinach.
2. Heat oil in a pan over medium heat.
3. Cook raisins, pine nuts, apple and shallots in oil for 5 minutes while stirring occasionally.
4. Now stir salt into raisin mixture then gradually add spinach.
5. Toss well until spinach is wilted.
6. Serve in a bowl.
